The Secret to Happiness: Rolo Chocolate Chip Cookies

There is nothing like a girl's weekend, loaded with champagne and comfy hotel bathrobes to get your week off on the right foot. We went up to Whistler to stay at the stunning Fairmont Chateau, and we all were totally blown away by the service, atmosphere and food.

Knowing that inevitably we would be hungry on the drive up, or at 3am, I decided to make cookies. When cooking for a bunch of girls, chocolate is always a safe bet. However, instead of making chocolate chip as I would usually do, I had a moment of genius! Couldn't anything be used as chocolate chips?! Next time you want to spice up this classic, try breaking a Score bar, Snickers bar, or Mars bar into bits...really the opportunities are endless. 

I used Mini Rolos and a scoop of coconut in this recipe, and they were a big hit after a night out dancing until our heels wore down.

Chewy Chocolate Chip  Mini Rolo and Coconut Cookies 

Prep: 10, Cook: 10-12
3/4 cup unsalted butter, softened
1 cup brown sugar
1/4 cup granulated sugar
1 egg
2 teaspoons vanilla extract
1 1/2 cups all purpose flour
1/2 cup shredded coconut
2 teaspoons cornstarch
1 teaspoon baking soda
1/2 teaspoon salt
8 ounces mini rolos, or other chocolate bar cut into chunks

1. Preheat oven to 350 F.
2.Cream together butter and sugars until smooth. Add egg and vanilla and blend in.
3. Stir in flour, cornstarch, baking soda and salt. Stir in chocolate.
4. Mould cookie dough into 2 tablespoon balls and drop onto a greased baking sheet and bake for 11-13 minutes, until golden brown around the edges.
